Onam Indus Hospitality Careers & Training

The rich cultural heritage and traditions of Kerala came together at its best form during the Onam celebrations at the institute on 2nd September 2014. Onam is the biggest and the most important festival of harvest celebrated with joy and enthusiasm all over the state of Kerala.

The most impressive part of the Onam celebration is the grand feast called Onasadhya, which was prepared by our student chefs under the guidance of an authentic cook from native Kerala. The elaborate sadhya at the institute comprised around 32 dishes – eight varieties each of four dishes, with rice as an essential ingredient of this strictly vegetarian meals along with different varieties of curries including avial, kalan, olan, erussery, different varieties of  upperies, chammanthis, and two types of payasams or pradhamans. The whole meal, served on  a tender banana leaf,  is consumed in one sitting, using hands and there is no concept of spoons or forks here.  The insitute was gaily decorated in traditional style including an intricate  Pookkalam and everyone at the institute were dressed in the traditional Kerala sarees and dhoties.

The institute had invited industry professionals, chefs from various star hotels, academicians from various hotel management institutes who participated in the event with enthusiasm, and particlarly appreciated the authenticity of the meal, and the efforts of the team to organise such a joyous Onam celebrations in traditional style.
